10-Minute Steamy Beets (with Pink Sipping Juice)

A fuss-free way to cook beets that kids actually love—tender, lightly salted, and finished with a rosy pot juice they’ll want to drink.

Ingredients

  • 4 beets, scrubbed and sliced
  • 1 tbsp avocado oil
  • 1/2 tsp salt
  • 1/2 cup water

Steps

  1. Sauté the beets: Heat the avocado oil in a pan over medium heat. Add the beets and salt, and sauté, stirring occasionally, for about 5 minutes.
  2. Add water and steam: Pour in the water, just enough to barely cover the beets. Cover with a lid and steam for about 7 minutes, until the beets are tender.
  3. Serve: Serve the beets warm—and don’t toss the rosy juice left in the pot. Kids love sipping it straight!

Notes:

The leftover pot juice is naturally sweet and gorgeously pink—a fun (and nutritious) bonus. A quick heads-up for new beet eaters: the pigments can tint the bathroom pink, which is totally harmless. No need to peel—just scrub the beets well, and you’ll keep the extra fiber and nutrients in the skin
